During the work week, I normally eat Greek yogurt with granola and berries for breakfast and some type of turkey sandwich for lunch. But when weekends or summer finally roll around, I am in desperate need of something different to eat. Like, if I see one more turkey sandwich I am going to scream, desperate.
Here is where this meal comes in. I love eating for either breakfast or lunch. It is filling, nutritious, and best of all, really yummy! There are a million and one ways to change this and make it how you want. I have been enjoying this delish combo all week.
Egg and Avocado Sandwich with Berry Smoothie
Egg and Avocado Sandwich
Ingredients:
1 cage free egg
1 tsp. butter
1/2 medium avocado
2 slices toasted bread (I love pumpernickel, but you can sub with whatever)
1 slice Provolone cheese
sea salt and fresh, cracked pepper to taste
Directions:
1. Melt butter in small pan over medium flame
2. Crack egg and begin to fry (*note: I like my eggs over medium, but you can make however you
prefer). Give the pan a shake so that the egg won't stick when ready to flip.
3. Cook egg until the outer white is cooked through and the inner white is mostly settled.
4. Carefully slide spatula under and gently flip over for another 10-15 seconds.
While the egg is cooking, toast Pumpernickel bread and then spread with avocado. When egg is ready, place on top of avocado, sprinkle with salt and pepper, add provolone cheese, and then cover immediately with 2nd piece of toast.
Berry Smoothie
Ingredients:
1/2 crushed ice
1/4 cup vanilla almond milk
1/2 cup vanilla Greek Yogurt
1/2 cup organic blueberries, raspberries, or strawberries
1 medium banana
Blend all ingredients and enjoy!
