Friday Five

Between teaching, taking care of the pups, and two grad school classes, I am more than happy to see Friday each week!

Here are my favorites for the week.

I have wanted a pair of this style flat, but since I feel like they are so trendy, I didn't want to invest a lot of money in a pair. At $20 ($15 right now on sale!), you can't go wrong. It's well documented that I like gold glitter (herehere, and here), so I'm super glad that I picked these up!



Yogi Detox Tea



I picked this up earlier this week, and I have been enjoying a large cup or two before bed. Although I was skeptical at first, I definitely have more energy and feel more balanced. There are a number of positive reviews online as well.

And finally... these two. What more can I say about these adorable faces?! Zoe is slowly becoming more accepting of Ruby. Baby steps, baby steps.

Loving Lately: Sparkly Collar Shirt

When spring/summer and fall/winter roll around, I like to update my wardrobe with a few key pieces. While I am not a super trendy dresser ( I like more classic clothes with a girly and glam twist), I like to add a few fresh pieces to update my look.

Tuesday Treats: Dark Chocolate and Mint Cake Pops

Last week I mentioned the cake pops I made for my boyfriend's birthday. The chocolate and mint cake pops that I had no idea what to do with. The one's that turned out amazing!

If you like any combination of mint and chocolate and you like cake pops, then you will definitely want to make these. Like, NOW!





Dark Chocolate and Mint Cake Pops

Ingredients:

favorite dark chocolate cake recipe ( I love this one) cooled

Mint Buttercream Recipe:
1 cup unsalted butter
4 cups powdered sugar
1/4 (ish) cup milk
1/2 teaspoon peppermint extract

1 bag Wilton chocolate mint candy melts
Oreo sprinkles
lollipop sticks

Recipe:

To create buttercream, mix butter until creamy. Slowly add in powdered sugar. When the two are mixed, add in milk until desired texture is mixed. Blend in peppermint extract. Place buttercream in the fridge to cool.

While buttercream is cooling, crumble the cake to a fine texture. Discard any tough pieces.  Mix the frosting one spoonful at a time, until the cake/frosting mixture is wet, but still balanced between cake and frosting. Refrigerate for 10-15 minutes to set.

Roll balls into similar size. I like to use a medium cookie scoop to help me use an equal amount for each. Place balls on wax paper and refrigerate 10-15 minutes to set.

While balls are chilling (Lol ;), melt the candy melts in a microwave safe dish. (I prefer something thin and tall to use the most chocolate possible. Nuke in 30 second increments, and stir in between until melted. Add a bit of vegetable oil to thin.

Take chilled balls out and dip lollipops sticks in melted chocolate; place each in a ball. Return balls to the fridge, minus 4 balls.

Dip each ball in chocolate. Dip in quickly, but be sure to gently remove. Sprinkle each cake pop with sprinkles. Continue to remove small batches from the fridge.
